Stuffed Chicken Breast with Spinach and Cheese
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 1/2 cup roasted red peppers, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Toothpicks
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the chicken breasts:
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Season the inside of each pocket with salt, pepper, and Italian seasoning.
- Prepare the filling:
- In a small pan, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the spinach leaves and cook until wilted, about 2-3 minutes. Remove from heat.
- Stuff the chicken breasts:
- Layer the spinach, roasted red peppers, and shredded mozzarella cheese inside each chicken breast pocket.
- Secure the edges of the chicken with toothpicks to keep the filling inside.
- Cook the chicken:
- Heat a large oven-safe skillet over medium-high heat and add a little olive oil.
- Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Serve:
- Remove the toothpicks from the chicken breasts and let rest for a few minutes before serving.
- Serve hot with your favorite side dishes.
