Stuffed Crepes with Spinach and Ricotta
Ingredients:
For the Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- Extra butter for cooking
For the Filling:
- 2 cups ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 1 garlic clove, minced
- Salt and pepper to taste
For the Sauce:
- 2 cups heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- Prepare the Crepes:
- In a large mixing bowl, whisk together the flour and salt. In another bowl, whisk together the eggs and milk.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Stir in the melted butter.
- Heat a non-stick skillet over medium heat and lightly coat with butter. Pour about 1/4 cup of the batter into the skillet and swirl to coat the bottom evenly.
- Cook for about 2 minutes, or until the edges start to lift and the bottom is golden brown. Flip and cook for another minute. Repeat with the remaining batter.
- Prepare the Filling:
- In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, beaten egg, minced garlic, salt, and pepper. Mix until well combined.
- Assemble the Crepes:
- Preheat your oven to 350°F (175°C).
- Lay a crepe on a flat surface and spread about 2-3 tablespoons of the filling in the center. Roll up the crepe and place it seam-side down in a baking dish.
- Repeat with the remaining crepes and filling, arranging them in a single layer in the baking dish.
- Prepare the Sauce:
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Stir in the mozzarella and Parmesan cheese until melted and smooth.
- Season with salt and pepper to taste.
- Bake the Crepes:
- Pour the cream sauce over the stuffed crepes in the baking dish, making sure they are well covered.
- Bake in the preheated oven for 20-25 minutes, or until the sauce is bubbly and the top is golden brown.
- Serve:
- Allow the crepes to cool for a few minutes before serving. They can be enjoyed as a main dish or a hearty side.
