Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 ¼ cups warm water (or milk)
  • 3 tablespoons olive oil or melted butter
  • 1 egg (for egg wash)

For the Filling:

  • 1 cup pitted olives (green or black), chopped
  • Optional: 1 cup cooked ground meat, sausage, or cheese cubes
  • Herbs (oregano, thyme, or parsley)

Instructions:

  1. Prepare the Dough:
    • In a bowl, mix flour, yeast, sugar, and salt. Gradually add warm water and knead until a soft dough forms.
    • Add olive oil and knead for 8-10 minutes until smooth. Cover and let it rise for 1 hour, or until doubled in size.
  2. Prepare the Filling:
    • Chop olives and combine them with herbs and any optional fillings like ground meat or cheese.
  3. Assemble the Bread:
    • Divide the dough into 2 portions. Roll out each portion into a flat round shape.
    • Spread the olive and filling mixture evenly over one side. Fold or layer the dough as desired.
  4. Shape and Brush:
    • Place the prepared dough rounds on parchment paper-lined baking trays. Flatten slightly.
    • Brush the tops with beaten egg for a golden crust.
  5. Bake:
    • Preheat the oven to 180°C (350°F). Bake for 25-30 minutes or until the bread turns golden and crispy.
  6. Serve:
    • Let it cool slightly, then slice and serve warm. Enjoy as a snack, appetizer, or side dish!
