Ingredients:

  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) can diced tomatoes with green chilies (e.g., Rotel)
  • 1 (4-ounce) can diced green chilies (optional for extra spice)
  • 2 cups beef broth (or chicken broth for lighter flavor)
  • 1 packet taco seasoning mix
  • 1 teaspoon chili powder (optional for more spice)
  • 1 teaspoon cumin
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped fresh cilantro
  • Diced avocado
  • Tortilla chips or strips
  • Lime wedges

Instructions:

  1. Cook the Ground Beef:
    • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
    • Add the diced onion to the beef and sauté for 2–3 minutes until softened.
  2. Combine Ingredients:
    • Stir in the taco seasoning, chili powder, and cumin, coating the beef and onion mixture evenly.
    • Add the black beans, kidney beans, corn, diced tomatoes, tomatoes with green chilies, green chilies (if using), and beef broth.
    • Stir well to combine and bring the soup to a gentle boil.
  3. Simmer:
    • Reduce the heat to low, cover, and let the soup simmer for 20–30 minutes, stirring occasionally. Adjust seasoning with salt and pepper as needed.
  4. Serve:
    • Ladle the soup into bowls and top with your favorite toppings like shredded cheese, sour cream, cilantro, or tortilla chips.
    • Serve with a lime wedge for a zesty finish.
