Taco Soup Recipe
Ingredients:
- 1 pound ground beef (or ground turkey)
- 1 medium onion, diced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (14.5-ounce) can diced tomatoes
- 1 (10-ounce) can diced tomatoes with green chilies (e.g., Rotel)
- 1 (4-ounce) can diced green chilies (optional for extra spice)
- 2 cups beef broth (or chicken broth for lighter flavor)
- 1 packet taco seasoning mix
- 1 teaspoon chili powder (optional for more spice)
- 1 teaspoon cumin
- Salt and pepper to taste
Optional Toppings:
- Shredded cheese
- Sour cream
- Chopped fresh cilantro
- Diced avocado
- Tortilla chips or strips
- Lime wedges
Instructions:
- Cook the Ground Beef:
- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
- Add the diced onion to the beef and sauté for 2–3 minutes until softened.
- Combine Ingredients:
- Stir in the taco seasoning, chili powder, and cumin, coating the beef and onion mixture evenly.
- Add the black beans, kidney beans, corn, diced tomatoes, tomatoes with green chilies, green chilies (if using), and beef broth.
- Stir well to combine and bring the soup to a gentle boil.
- Simmer:
- Reduce the heat to low, cover, and let the soup simmer for 20–30 minutes, stirring occasionally. Adjust seasoning with salt and pepper as needed.
- Serve:
- Ladle the soup into bowls and top with your favorite toppings like shredded cheese, sour cream, cilantro, or tortilla chips.
- Serve with a lime wedge for a zesty finish.
