Vegetable Baked Slices Recipe
Ingredients:
- 2 cups grated vegetables (carrot, zucchini, bell peppers, etc.)
- 1 cup all-purpose flour (or whole wheat flour for a healthier option)
- 3 eggs
- 1/2 cup plain yogurt or milk
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon turmeric or paprika (optional, for color and flavor)
- 1/4 cup chopped fresh herbs (parsley, dill, or green onions)
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Sesame seeds or nigella seeds for topping (optional)
Instructions:
- Preheat and Prepare:
- Preheat your oven to 375°F (190°C).
- Line a large baking sheet or shallow pan with parchment paper and lightly grease it.
- Prepare the Batter:
- In a mixing bowl, whisk the eggs, yogurt (or milk), and oil until smooth.
- Add the flour, baking powder, salt, black pepper, and turmeric (if using). Mix to form a smooth batter.
- Fold in the grated vegetables, herbs, and half of the shredded cheese.
- Assemble and Bake:
- Pour the batter evenly onto the prepared baking sheet, spreading it to a uniform thickness (around 1/2 inch).
- Sprinkle the remaining cheese on top and, if desired, sesame or nigella seeds for a crunchy topping.
- Bake in the preheated oven for 20-25 minutes or until golden brown and firm to the touch.
- Slice and Serve:
- Allow to cool slightly before slicing into rectangular or square pieces.
