- Heat the olive oil in a large oven-safe skillet over medium heat. Sauté the onion, red and yellow peppers, and broccoli until they are just softened, about 5-7 minutes.
3. Mix the Eggs:
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
4. Combine Ingredients:
- Add the sautéed vegetables to the egg mixture and stir in half of the cheese.
5. Bake the Frittata:
- Pour the mixture back into the skillet (or a baking dish if your skillet is not oven-safe). Sprinkle the remaining cheese over the top.
- Transfer to the oven and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
6. Serve:
- Let the frittata cool for a few minutes before slicing and serving. It can be enjoyed hot or at room temperature.
This vegetable frittata is not only a hearty and nutritious meal but also versatile enough to be served for breakfast, lunch, or dinner. It’s a great way to use up leftover vegetables and can be adapted to include whatever you have on hand.
