Ingredients:

  • 2 cups grated vegetables (such as carrots, zucchini, and potatoes)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh herbs (such as parsley and cilantro)
  • 1/2 cup flour (use all-purpose or chickpea flour for a gluten-free option)
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Oil, for frying

Instructions:

1. Prepare the Vegetables:

  • Squeeze out any excess moisture from the grated vegetables using a clean cloth or paper towel.

2. Mix Ingredients:

  • In a large bowl, combine the grated vegetables, onion, garlic, and fresh herbs. Add the flour and mix until the vegetables are well-coated.
  • Stir in the beaten eggs, salt, and pepper until the mixture is well combined.

3. Shape the Patties:
