Ingredients
For the Croquettes:
- 2 cups cooked ham, finely chopped
 - 1 cup mozzarella cheese, shredded
 - 1/4 cup green onions, finely sliced
 - 2 tablespoons all-purpose flour
 - 2 tablespoons butter
 - 1 cup milk
 - Salt and pepper, to taste
 - 1/2 teaspoon nutmeg (optional)
 
For Breading and Frying:
- 1 cup all-purpose flour
 - 2 eggs, beaten
 - 2 cups breadcrumbs
 - Oil for frying
 
Instructions
Making the Filling:
- Make a roux: In a saucepan over medium heat, melt the butter. Add 2 tablespoons of flour and stir for about 2 minutes.
 - Add milk: Slowly whisk in the milk, ensuring there are no lumps. Cook until the mixture thickens into a sauce.
 - Combine ingredients: Remove from heat and stir in the chopped ham, mozzarella cheese, and green onions. Season with salt, pepper, and nutmeg. Mix until well combined.
 - Cool the mixture: Transfer the mixture to a bowl and let it cool in the fridge for at least an hour, or until firm enough to shape.
 
Shaping and Frying:
- Shape the croquettes: Once cooled, take spoonfuls of the mixture and shape into small balls or cylinders.
 - Dredge in flour: Roll each croquette in flour, then dip into beaten eggs, and finally coat with breadcrumbs.
 - Fry the croquettes: Heat oil in a deep fryer or large pan to 350°F (175°C). Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes.
 - Drain: Remove from oil and drain on paper towels.
 
Serve these cheesy ham croquettes hot with a side of lime wedges or your favorite dipping sauce. They make for a delightful snack or appetizer!
