White Chocolate Layer Cake Recipe
Ingredients:
- For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 cup whole milk, at room temperature
- For the White Chocolate Filling:
- 8 oz white chocolate, chopped
- 1 cup heavy cream
- 1/4 cup unsalted butter
- For the White Chocolate Frosting:
- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 1 cup unsalted butter, at room temperature
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
- For Decoration:
- White chocolate curls or shavings
Instructions:
- Prepare the Cake Layers:
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Prepare the White Chocolate Filling:
- In a heatproof bowl, combine the white chocolate, heavy cream, and butter.
- Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate and butter are melted and the mixture is smooth.
- Remove from heat and let the filling cool to room temperature, then refrigerate until thickened, about 1 hour.
- Prepare the White Chocolate Frosting:
- In a heatproof bowl, combine the white chocolate and heavy cream.
- Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate is melted and the mixture is smooth.
- Remove from heat and let cool to room temperature.
- In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until light and fluffy.
- Beat in the melted white chocolate mixture and vanilla extract until smooth and well combined.
- Assemble the Cake:
- Place one cake layer on a serving plate or cake stand.
- Spread half of the white chocolate filling over the top.
- Top with the second cake layer and spread the remaining filling over the top.
- Place the third cake layer on top.
- Frost the top and sides of the cake with the white chocolate frosting.
- Decorate with white chocolate curls or shavings.
- Serve and Enjoy:
- Chill the cake in the refrigerator for at least 1 hour before serving to set the frosting.
