White Chocolate Layer Cake Recipe

 

 

Ingredients:

  • For the Cake:
    • 2 1/2 cups all-purpose flour
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, at room temperature
    • 2 cups granulated sugar
    • 4 large eggs, at room temperature
    • 2 teaspoons vanilla extract
    • 1 cup whole milk, at room temperature
  • For the White Chocolate Filling:
    • 8 oz white chocolate, chopped
    • 1 cup heavy cream
    • 1/4 cup unsalted butter
  • For the White Chocolate Frosting:
    • 8 oz white chocolate, chopped
    • 1/2 cup heavy cream
    • 1 cup unsalted butter, at room temperature
    • 4 cups powdered sugar
    • 2 teaspoons vanilla extract
  • For Decoration:
    • White chocolate curls or shavings

Instructions:

  1. Prepare the Cake Layers:
    • Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, beat the butter and sugar together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
    • Divide the batter evenly among the prepared pans and smooth the tops.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  2. Prepare the White Chocolate Filling:
    • In a heatproof bowl, combine the white chocolate, heavy cream, and butter.
    • Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate and butter are melted and the mixture is smooth.
    • Remove from heat and let the filling cool to room temperature, then refrigerate until thickened, about 1 hour.
  3. Prepare the White Chocolate Frosting:
    • In a heatproof bowl, combine the white chocolate and heavy cream.
    • Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate is melted and the mixture is smooth.
    • Remove from heat and let cool to room temperature.
    • In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until light and fluffy.
    • Beat in the melted white chocolate mixture and vanilla extract until smooth and well combined.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate or cake stand.
    • Spread half of the white chocolate filling over the top.
    • Top with the second cake layer and spread the remaining filling over the top.
    • Place the third cake layer on top.
    • Frost the top and sides of the cake with the white chocolate frosting.
    • Decorate with white chocolate curls or shavings.
  5. Serve and Enjoy:
    • Chill the cake in the refrigerator for at least 1 hour before serving to set the frosting.
    • Slice and serve your beautiful white chocolate layer cake!
