Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour (for a healthier twist)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional, for added flavor)
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1/2 cup finely chopped dried apricots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup buttermilk or plain yogurt (to moisten the batter)

Instructions:

  1. Preheat the Oven and Prepare the Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together both flours, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Cream Butter and Sugars:
    • In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.
    • Add eggs, one at a time, beating well after each addition.
    • Stir in vanilla extract.
  4. Combine with Fruits and Vegetables:
    • Mix in the grated carrots and zucchini.
    • Add the dried apricots, raisins, and walnuts, mixing until evenly distributed.
  5. Add Dry Ingredients and Buttermilk:
    • Alternately add the dry ingredients and buttermilk to the creamed mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Bake the Cake:
    • Pour the batter into the prepared cake pan.
    • Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Dust with powdered sugar or top with a light glaze if desired.
