Zucchini Fritters Recipe
Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup all-purpose flour (or substitute with a gluten-free option)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil or vegetable oil for frying
Instructions:
- Prepare Zucchini: Place the grated zucchini in a colander set over a bowl. Sprinkle with the salt and let it sit for 10 minutes. Squeeze out as much liquid as possible using a clean kitchen towel or by pressing down with a spoon.
- Mix Ingredients: In a large bowl, beat the eggs. Add the drained zucchini, flour, Parmesan, green onions, and black pepper. Stir until well combined.
- Heat Oil: Heat oil in a large skillet over medium-high heat.
- Cook Fritters: For each fritter, scoop about 2 tablespoons of the zucchini mixture into the skillet, flattening to a pancake shape with the back of a spoon. Cook for 3-4 minutes on each side or until golden brown and crispy.
- Serve: Transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve hot with a dollop of sour cream or yogurt and a sprinkle of fresh herbs.
