No-Bake Lime Cheesecake Recipe

 

 

 

Ingredients

For the crust:
  • 200g (2 cups) graham cracker crumbs
  • 100g (1/2 cup) melted unsalted butter
  • 2 tablespoons sugar (optional)
For the filling:
  • 250g (8 oz) cream cheese, softened
  • 200ml (3/4 cup) heavy whipping cream
  • 1/2 cup condensed milk
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1/2 teaspoon vanilla extract
For decoration:
  • Whipped cream
  • Lime slices or lime zest

Instructions

  1. Prepare the crust:
    • Mix the graham cracker crumbs, melted butter, and sugar (if using) until it resembles wet sand.
    • Press the mixture into the base of a 9-inch springform pan, spreading it evenly.
    • Chill in the refrigerator for at least 30 minutes to set.
  2. Make the filling:
    • In a large bowl, beat the cream cheese until smooth and creamy.
    • Gradually add the condensed milk, lime juice, and vanilla extract. Mix until fully combined.
    • Fold in the lime zest for added flavor.
    • Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
  3. Assemble the cheesecake:
    • Pour the filling over the prepared crust and smooth the top with a spatula.
    • Refrigerate for at least 4-6 hours or overnight to allow it to set completely.
  4. Decorate and serve:
    • Once set, remove the cheesecake from the pan and transfer it to a serving plate.
    • Decorate with whipped cream, lime slices, and extra lime zest as desired.
    • Slice and enjoy!
