No-Bake Lime Cheesecake Recipe
Ingredients
For the crust:
- 200g (2 cups) graham cracker crumbs
- 100g (1/2 cup) melted unsalted butter
- 2 tablespoons sugar (optional)
For the filling:
- 250g (8 oz) cream cheese, softened
- 200ml (3/4 cup) heavy whipping cream
- 1/2 cup condensed milk
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1/2 teaspoon vanilla extract
For decoration:
- Whipped cream
- Lime slices or lime zest
Instructions
- Prepare the crust:
- Mix the graham cracker crumbs, melted butter, and sugar (if using) until it resembles wet sand.
- Press the mixture into the base of a 9-inch springform pan, spreading it evenly.
- Chill in the refrigerator for at least 30 minutes to set.
- Make the filling:
- In a large bowl, beat the cream cheese until smooth and creamy.
- Gradually add the condensed milk, lime juice, and vanilla extract. Mix until fully combined.
- Fold in the lime zest for added flavor.
- Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
- Assemble the cheesecake:
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Refrigerate for at least 4-6 hours or overnight to allow it to set completely.
- Decorate and serve:
- Once set, remove the cheesecake from the pan and transfer it to a serving plate.
- Decorate with whipped cream, lime slices, and extra lime zest as desired.
