“Banana Oat Breakfast Bread”
Ingredients:
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 3 ripe bananas, mashed
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries or raisins (optional)
Instructions:
Preparing the Batter:
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Dry Ingredients: In a large bowl, mix together the flour, rolled oats, sugar, baking powder, baking soda, salt, and cinnamon.
- Wet Ingredients: In another bowl, whisk together the mashed bananas, eggs, melted butter, milk, and vanilla extract.
- Combine: Add the wet ingredients to the dry ingredients, stirring just until moistened. Fold in the dried cranberries or raisins if using.
Baking the Bread:
- Pour into Pan: Spoon the batter into the prepared loaf pan.
- Bake: Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cooling: Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
