Garlic Butter Seared Scallops

 

 

 

Ingredients:

  • 12 large sea scallops
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1/4 cup chicken or seafood stock (optional)
  • Salt and pepper to taste
  • 1 tbsp chopped parsley (for garnish)

Instructions:

  1. Prepare the Scallops:
    • Pat the scallops dry with a paper towel (this ensures a nice sear).
    • Season both sides with salt and pepper.
  2. Sear the Scallops:
    • Heat olive oil in a large skillet over medium-high heat.
    • Once the oil is hot, carefully place the scallops in the pan, leaving space between them.
    • Sear for 2–3 minutes on each side until a golden crust forms. Remove scallops and set aside.
  3. Make the Garlic Butter Sauce:
    • Reduce the heat to medium and add butter to the same pan.
    • Stir in the minced garlic and sauté until fragrant (about 1 minute).
    • Optional: Add chicken or seafood stock and simmer for 1–2 minutes to reduce slightly.
    • Squeeze in lemon juice and stir.
  4. Combine:
    • Return the scallops to the pan and spoon the garlic butter sauce over them.
    • Cook for 1–2 minutes to heat through, ensuring not to overcook the scallops.
  5. Serve:
    • Garnish with chopped parsley and serve immediately.
    • Pair with a side of rice, pasta, or steamed vegetables.
