Almond-Topped Sweet Brioche Swirls
Ingredients:
For the Dough:
- 3 cups (375g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/2 tsp salt
- 2 1/4 tsp (1 packet) instant yeast
- 1/2 cup (120ml) warm milk (around 110°F/45°C)
- 2 large eggs
- 1/4 cup (60g) unsalted butter, softened
For the Filling:
- 1/4 cup (50g) unsalted butter, softened
- 1/3 cup (70g) brown sugar
- 1 tsp vanilla extract
- 1/2 cup (50g) almond flour or finely ground almonds
- 1/4 cup sliced almonds (for garnish)
For the Egg Wash:

- 1 egg, beaten
- 1 tbsp milk
Optional Glaze:
- 1/4 cup (50g) powdered sugar
- 1-2 tbsp milk or cream
- A few drops of vanilla extract
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the flour, sugar, salt, and yeast.
- In a separate bowl, whisk together the warm milk and eggs. Add this to the dry ingredients and mix until combined.
- Add the softened butter and knead the dough on a floured surface for about 8–10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6–8 minutes.
- Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1–1.5 hours, or until doubled in size.
- Prepare the Filling:
- Mix the softened butter, brown sugar, vanilla extract, and almond flour into a smooth paste.
- Shape the Pastries:
- After the dough has risen, punch it down and roll it out into a large rectangle (approximately 12×18 inches or 30×45 cm).
- Spread the almond filling evenly over the dough.
- Roll the dough tightly into a log from the longer edge, then cut it into 10–12 equal slices.
- Place the swirls onto a baking sheet lined with parchment paper, leaving space between them for rising. Cover loosely and let rise for another 30–40 minutes.
- Bake:
- Preheat the oven to 375°F (190°C).
- Brush the swirls with the egg wash and sprinkle sliced almonds on top.
- Bake for 15–20 minutes, or until golden brown.
- Glaze (Optional):
- Mix powdered sugar, milk, and vanilla extract into a smooth glaze.
- Drizzle over the cooled pastries for extra sweetness.
