Almond-Topped Sweet Brioche Swirls

 

 

 

Ingredients:

For the Dough:

  • 3 cups (375g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 tsp salt
  • 2 1/4 tsp (1 packet) instant yeast
  • 1/2 cup (120ml) warm milk (around 110°F/45°C)
  • 2 large eggs
  • 1/4 cup (60g) unsalted butter, softened

For the Filling:

  • 1/4 cup (50g) unsalted butter, softened
  • 1/3 cup (70g) brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup (50g) almond flour or finely ground almonds
  • 1/4 cup sliced almonds (for garnish)

For the Egg Wash:

  • 1 egg, beaten
  • 1 tbsp milk

Optional Glaze:

  • 1/4 cup (50g) powdered sugar
  • 1-2 tbsp milk or cream
  • A few drops of vanilla extract

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, sugar, salt, and yeast.
    • In a separate bowl, whisk together the warm milk and eggs. Add this to the dry ingredients and mix until combined.
    • Add the softened butter and knead the dough on a floured surface for about 8–10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6–8 minutes.
    • Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1–1.5 hours, or until doubled in size.
  2. Prepare the Filling:
    • Mix the softened butter, brown sugar, vanilla extract, and almond flour into a smooth paste.
  3. Shape the Pastries:
    • After the dough has risen, punch it down and roll it out into a large rectangle (approximately 12×18 inches or 30×45 cm).
    • Spread the almond filling evenly over the dough.
    • Roll the dough tightly into a log from the longer edge, then cut it into 10–12 equal slices.
    • Place the swirls onto a baking sheet lined with parchment paper, leaving space between them for rising. Cover loosely and let rise for another 30–40 minutes.
  4. Bake:
    • Preheat the oven to 375°F (190°C).
    • Brush the swirls with the egg wash and sprinkle sliced almonds on top.
    • Bake for 15–20 minutes, or until golden brown.
  5. Glaze (Optional):
    • Mix powdered sugar, milk, and vanilla extract into a smooth glaze.
    • Drizzle over the cooled pastries for extra sweetness.
