Ingredients:

  • 4 salmon fillets, skin on
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups fresh spinach leaves
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • Grated Parmesan cheese (optional, for garnish)

Instructions:

  1. Prepare the Salmon:
    • Season the salmon fillets with salt and pepper on both sides.
  2. Cook the Salmon:
    • Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the salmon fillets, skin-side down, and sear without moving them for about 5-6 minutes or until the skin is crispy.

    • Stir in the lemon zest and lemon juice, and season with additional salt and pepper to taste.
  4. Serve:
    • Place a generous amount of creamy spinach on each plate. Top with a salmon fillet. Garnish with grated Parmesan cheese if desired.
