Swirled Berry Jam Mini Loaves.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup your favorite red fruit jam (like strawberry or raspberry)

Instructions:

1. Preheat and Prepare

Preheat your oven to 350°F (175°C). Grease and line four mini loaf pans with parchment paper or use disposable aluminum trays for easy cleanup.

2. Mix Dry Ingredients

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

3. Cream Butter and Sugar

In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

4. Combine with Dry Ingredients

Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.

5. Add Jam

Pour the batter into the prepared pans, filling each about 2/3 full. Spoon several dollops of jam on top of the batter in each pan, and use a knife or a skewer to swirl the jam into the batter, creating a marbled effect.

6. Bake

Place the pans in the oven and bake for 25-30 minutes, or until a toothpick inserted into the center of the loaves comes out clean.

7. Cool and Serve

Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.
