Ingredients:

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon red pepper flakes (optional for spice)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can (14 oz) diced tomatoes
  • 2 cups fresh spinach (chopped)
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions:

  1. Cook the Sausage:
    • Heat olive oil in a large pot over medium heat.
    • Add the sausage and cook until browned, breaking it into small pieces with a spoon.
    • Remove the cooked sausage and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add diced onion and cook until soft and translucent (about 3-4 minutes).
    • Stir in minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
  3. Simmer the Soup:
    • Add chicken broth, diced tomatoes (with their juice), and Italian seasoning to the pot.
    • Bring the mixture to a simmer, then lower the heat and let it cook for 10 minutes.
  4. Add Cream and Spinach:
    • Stir in the heavy cream and chopped spinach.
    • Cook for 5 minutes until the spinach wilts.
  5. Combine and Season:
    • Return the cooked sausage to the pot and stir to combine.
    • Season the soup with salt and pepper to taste.
  6. Add the Cheese:
    • Sprinkle grated Parmesan cheese into the soup and stir until melted.
    • Ladle the soup into bowls and top each serving with shredded mozzarella cheese.
    • Optionally, place the bowls under a broiler for a few minutes to melt and brown the cheese slightly.
