Creamy Tomato Shrimp Pasta Delight

Ingredients:

  • 200g spaghetti or fettuccine
  • 300g shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 400g canned tomato sauce
  • 200ml heavy cream
  • 100g Parmesan cheese, grated
  • Fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Red chili flakes (optional for extra heat)

Instructions:

  1. Prepare the Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Shrimp:
    • Heat olive oil in a large skillet over medium heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and are cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add a bit more oil if needed. Sauté the onion and garlic until translucent and fragrant.
    • Pour in the tomato sauce and let simmer for about 5 minutes to blend the flavors.
    • Stir in the heavy cream and bring to a simmer. Allow the sauce to thicken slightly, then add half of the grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
  4. Combine:
    • Add the cooked pasta and shrimp back into the skillet with the sauce. Toss everything together until the pasta is well coated.
    • If the sauce is too thick, add a little pasta water or more cream to adjust the consistency.
  5. Serve:
    • Serve the pasta hot, garnished with the remaining Parmesan, chopped basil, and a sprinkle of red chili flakes if desired.
