Ingredients:

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cubed
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Filling:

  • 1 1/2 cups fruit jam or marmalade (e.g., apricot, peach, or pineapple)
  • 1/2 cup shredded fresh fruit (optional, for extra texture)

For the Top:

  • 1 egg, beaten (for brushing)

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the flour, sugar, baking powder, and salt.
    • Add the cubed butter and mix with your hands or a pastry cutter until the mixture resembles coarse crumbs.
    • Add the eggs and vanilla extract, mixing until a dough forms.
    • Divide the dough into two portions: one slightly larger for the base and one smaller for the top lattice. Wrap both in plastic wrap and chill for 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch tart or pie pan.
  3. Assemble the Base:
    • Roll out the larger portion of dough on a floured surface and press it evenly into the prepared pan, trimming any excess.
  4. Add the Filling:
    • Spread the jam evenly over the base. If desired, sprinkle shredded fresh fruit over the jam for added texture.
  5. Create the Lattice Top:
    • Roll out the remaining dough and cut it into strips about 1/2 inch wide.
    • Arrange the strips in a lattice pattern over the jam filling.
  6. Brush and Bake:
    • Brush the lattice top with the beaten egg for a golden finish.
    • Bake for 25-30 minutes, or until the crust is golden brown.
  7. Cool and Serve:
    • Allow the tart to cool completely before slicing and serving.
