Banana Oat Pancakes

 

 

 

Ingredients:

  • 2 ripe bananas (mashed)
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt
  • Cooking oil or butter (for frying)

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, mash the ripe bananas until smooth.
    • Add the rolled oats, eggs, cinnamon, vanilla extract, and a pinch of salt. Mix until everything is well combined. Let the mixture rest for 5-10 minutes to allow the oats to absorb some moisture.
  2. Heat the Pan:
    • Heat a non-stick skillet or frying pan over medium heat. Add a small amount of cooking oil or butter.
  3. Cook the Pancakes:
    • Scoop about 2 tablespoons of batter for each pancake and place it on the pan.
    • Flatten slightly with the back of a spoon to shape them evenly.
    • Cook for 2-3 minutes on each side, or until golden brown and cooked through.
  4. Serve:
    • Transfer the pancakes to a plate and serve warm. You can top them with honey, maple syrup, fresh fruit, or yogurt for added flavor.

Tips:

  • For added flavor, mix in chopped nuts, raisins, or chocolate chips to the batter.
  • If the mixture is too wet, add a bit more oats to thicken it.
