Banana Oat Pancakes
Ingredients:
- 2 ripe bananas (mashed)
- 1 cup rolled oats
- 2 eggs
- 1/2 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional)
- Pinch of salt
- Cooking oil or butter (for frying)
Instructions:
- Prepare the Batter:
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, eggs, cinnamon, vanilla extract, and a pinch of salt. Mix until everything is well combined. Let the mixture rest for 5-10 minutes to allow the oats to absorb some moisture.
- Heat the Pan:
- Heat a non-stick skillet or frying pan over medium heat. Add a small amount of cooking oil or butter.
- Cook the Pancakes:
- Scoop about 2 tablespoons of batter for each pancake and place it on the pan.
- Flatten slightly with the back of a spoon to shape them evenly.
- Cook for 2-3 minutes on each side, or until golden brown and cooked through.
- Serve:
- Transfer the pancakes to a plate and serve warm. You can top them with honey, maple syrup, fresh fruit, or yogurt for added flavor.
Tips:
- For added flavor, mix in chopped nuts, raisins, or chocolate chips to the batter.
- If the mixture is too wet, add a bit more oats to thicken it.
