Hearty Beef and Potato Stew
Ingredients
- For the Stew:
- 2 tablespoons olive oil or butter
- 1 pound (450g) beef stew meat, cubed
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth (or stock)
- 2 large potatoes, peeled and cubed
- 2 medium carrots, sliced (optional)
- 1 cup diced tomatoes (fresh or canned)
- 2 teaspoons paprika
- 1 teaspoon cumin (optional)
- 1 bay leaf
- Salt and black pepper to taste
- For Garnish:
- Sour cream or plain yogurt
- Chopped fresh chives or parsley
Instructions
- Sear the Beef:
- Heat olive oil or butter in a large pot over medium-high heat.
- Season the beef cubes with salt and pepper, then sear them on all sides until browned. Remove and set aside.
- Sauté Vegetables:
- In the same pot, add the diced onion and cook until translucent (about 3–4 minutes).
- Stir in the minced garlic and cook for an additional minute.
- Deglaze and Build the Base:
- Add the paprika and cumin (if using), stirring for 30 seconds to release their aroma.
- Deglaze the pot with a splash of beef broth, scraping up the browned bits at the bottom of the pot for added flavor.
- Simmer the Stew:
- Return the seared beef to the pot.
- Add the beef broth, diced tomatoes, bay leaf, potatoes, and carrots (if using).
- Bring to a boil, then reduce the heat to low and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust Seasoning:
- Taste the stew and adjust the salt, pepper, or spices if necessary.
- Serve and Garnish:
- Ladle the stew into bowls.
- Top with a dollop of sour cream or yogurt and sprinkle with fresh chives or parsley.
