Nun’s Puffs are light, airy pastries that melt in your mouth with buttery richness and golden tops. Ingredients:

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup whole milk

  • 1/4 cup all-purpose flour

  • 4 large eggs

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Generously grease a standard muffin pan — these puffs love to rise and will stick without proper prep.

  2. Prepare the Dough:
    In a medium saucepan over medium heat, melt the butter with the milk. Stir frequently and bring just to a gentle simmer.

  3. Add Flour:
    Once the butter is fully melted and the mixture is hot, quickly stir in the flour all at once. Continue stirring until the mixture forms a soft, smooth dough and pulls away from the sides of the pan — about 1–2 minutes.

    Remove from heat and let the dough cool for 5–10 minutes so it doesn’t scramble the eggs in the next step.

  5. Add Eggs:
    One at a time, beat in the eggs, mixing well after each addition. The mixture will appear slippery at first, but keep mixing until smooth and shiny.

  6. Fill the Muffin Pan:
    Spoon the batter into the greased muffin cups, filling each one about 2/3 to 3/4 full. The dough is thick but will puff dramatically in the oven.

  7. Bake:
    Place the muffin pan in the preheated oven and bake for 30–35 minutes, or until the puffs are golden brown and nicely risen. Avoid opening the oven door early, as this may cause them to collapse.

  8. Finish and Serve:
    Remove from the oven and immediately drizzle with honey or sprinkle with sugar while warm. Serve fresh and airy.
