Crispy Batter-Dipped Fish

Ingredients

For the Fish

1½ lbs (680 g) white fish fillets (cod, haddock, pollock, or tilapia), cut into serving pieces

Salt and black pepper, to taste

Vegetable oil, for frying

For the Batter

1½ cups all-purpose flour

½ cup cornstarch

2 tsp baking powder

1 tsp garlic powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

1 large egg

1¼ cups ice-cold sparkling water (or club soda)

Instructions

Pat the fish dry and season both sides with salt and pepper.

Heat 2–3 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).

In a large bowl, whisk together the flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper.

Beat in the egg, then slowly whisk in the cold sparkling water until the batter is smooth. Do not overmix.

Dip each fish fillet into the batter, allowing the excess to drip off.

Carefully lower the fish into the hot oil. Fry for 4–6 minutes per side, or until golden brown and the fish flakes easily with a fork.

Transfer to a wire rack or paper towels to drain.

Serve hot with:

French fries

Tartar sauce

Lemon wedges

Coleslaw
