No-Bake Chocolate Biscuit Cake

No-Bake Chocolate Biscuit Cake
Ingredients:
- 300g digestive biscuits (or any plain biscuits), broken into small pieces
- 200g dark chocolate, chopped
- 100g milk chocolate, chopped
- 200g unsalted butter
- 100g granulated sugar
- 2 tablespoons cocoa powder
- 4 tablespoons golden syrup or honey
- 1 teaspoon vanilla extract
- Optional toppings: white chocolate chips or chopped nuts
Instructions:
- Prepare the Biscuits:
- Break the digestive biscuits into small pieces and place them in a large mixing bowl.
- Melt the Chocolate Mixture:
- In a saucepan over medium heat, melt the butter, sugar, cocoa powder, and golden syrup (or honey) together. Stir continuously until the mixture is smooth and well combined.
- Remove the saucepan from the heat and add the chopped dark and milk chocolate. Stir until the chocolate is completely melted and the mixture is smooth. Add the vanilla extract and mix well.
- Combine with Biscuits:
- Pour the melted chocolate mixture over the broken biscuits in the mixing bowl. Mix until all the biscuit pieces are well coated with the chocolate mixture.
- Set the Cake:
- Line a square or rectangular baking dish with parchment paper. Pour the biscuit and chocolate mixture into the prepared dish and press it down firmly to create an even layer.
- Chill:
- Place the baking dish in the refrigerator and chill for at least 2 hours or until the cake is firm.
- Prepare the Topping:
- Once the cake is firm, you can prepare the topping. Melt some additional chocolate (about 100g) and pour it over the chilled cake to create a smooth, shiny top layer. Spread it evenly with a spatula.
- Optionally, you can sprinkle white chocolate chips or chopped nuts on top of the melted chocolate for decoration.
- Cut and Serve:
- Once the topping has set, remove the cake from the refrigerator. Lift it out of the baking dish using the parchment paper and place it on a cutting board. Cut the cake into squares or rectangles.
