Cheesy Ground Beef and Potato Casserole

 

 

Ingredients:

  • For the Casserole:
    • 1 pound ground beef
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 6 large potatoes, peeled and cubed
    • 2 cups shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup sour cream
    • 1/2 cup milk
    • 1 teaspoon paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    • 2 tablespoons butter
  • For Garnish:
    • 2 green onions, chopped
    • Fresh parsley, chopped (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef:
    • In a large skillet over medium heat, add the olive oil and diced onions. Cook until the onions are soft and translucent.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Add the ground beef to the skillet. Cook until the beef is browned and cooked through. Drain any excess fat.
    • Season the beef with paprika, dried oregano, dried thyme, salt, and pepper. Stir well to combine and set aside.
  3. Prepare the Potatoes:
    • In a large pot, bring water to a boil and add the cubed potatoes. Cook for about 10 minutes, or until the potatoes are just tender but not falling apart.
    • Drain the potatoes and set aside.
  4. Assemble the Casserole:
    • In a large mixing bowl, combine the cooked potatoes, cooked ground beef mixture, sour cream, milk, and 1 cup of shredded cheddar cheese. Mix gently until well combined.
    • Grease a large baking dish with butter. Pour the mixture into the baking dish and spread it out evenly.
    • Sprinkle the remaining 1 cup of shredded cheddar cheese and the mozzarella cheese over the top.
  5. Bake the Casserole:
    • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
  6. Garnish and Serve:
    • Remove the casserole from the oven and let it cool slightly.
    • Garnish with chopped green onions and fresh parsley, if desired.
    • Serve hot and enjoy this comforting cheesy ground beef and potato casserole.
