Stuffed Veggie Flatbreads
Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 3/4 cup warm water
For the Filling:
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 medium carrot, grated
- 1 cup cabbage, finely shredded
- 1 cup cooked chicken, shredded (optional)
- 2 eggs, lightly beaten
- Salt and pepper to taste
- 1 teaspoon soy sauce (optional)
- 1 teaspoon sesame oil (optional)
- Chopped green onions (for garnish)
Instructions:
- Prepare the Dough:
- In a large bowl, combine the flour and salt.
- Add the vegetable oil and warm water, mixing until a dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Cover with a damp cloth and let rest for at least 30 minutes.
- Prepare the Filling:
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and garlic, cooking until softened and fragrant.
- Add the grated carrot and shredded cabbage, cooking until they start to soften.
- If using chicken, add it to the skillet and stir to combine.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
- Scramble the eggs until cooked through, then mix with the vegetables.
- Season with salt, pepper, soy sauce, and sesame oil (if using).
- Remove from heat and let the filling cool slightly.
- Assemble the Flatbreads:
- Divide the dough into equal-sized balls (about 8-10).
- Roll each ball into a small circle on a floured surface.
- Place a generous spoonful of the filling in the center of each circle.
- Fold the edges over the filling, pinching to seal and forming a flat round shape.
- Gently flatten with your hands or a rolling pin.
- Cook the Flatbreads:
- Heat a skillet or griddle over medium heat and lightly grease with oil.
- Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
- Repeat with the remaining flatbreads.
- Serve:
- Garnish with chopped green onions.
