Braised Beef Roast with Caramelized Onions

 

Ingredients:

For the Beef Roast:

  • 3-4 lb beef chuck roast
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 large onions, sliced into rings
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 325°F (165°C).
  2. Prepare the Beef Roast:
    • Season the beef roast generously with salt and black pepper on all sides.
  3. Sear the Beef Roast:
    • In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
    • Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove the roast from the pot and set aside.
  4. Caramelize the Onions:
    • In the same pot, add the sliced onions and cook over medium heat until they start to caramelize, about 10-15 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes.
  5. Deglaze the Pot:
    • Add the beef broth and red wine (if using) to the pot, scraping up any browned bits from the bottom.
    • Stir in the tomato paste, Worcestershire sauce, dried thyme, and dried rosemary.
  6. Braise the Beef Roast:
    • Return the beef roast to the pot, nestling it among the onions and liquid.
    • Cover the pot with a lid and transfer it to the preheated oven.
    • Braise the beef roast for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
  7. Serve:
    • Remove the pot from the oven and let the beef roast rest for 10 minutes before slicing.
    • Serve the sliced beef roast with the caramelized onions and sauce from the pot.
    • Garnish with chopped fresh parsley.
