Roasted Cauliflower with Cheese Sauce

 

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons chopped fresh parsley, for garnish

For the Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup grated sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Roast the Cauliflower:
    • Preheat your oven to 425°F (220°C).
    • Toss the cauliflower florets with olive oil, salt, pepper, and paprika if using. Spread them in a single layer on a baking sheet.
    • Roast in the oven for 20-25 minutes, or until the cauliflower is tender and the edges are golden brown and crispy.
  2. Prepare the Cheese Sauce:
    • While the cauliflower is roasting, melt butter in a saucepan over medium heat.
    • Stir in the flour and cook for 1-2 minutes until it forms a paste and smells slightly toasted.
    • Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly, until the sauce thickens.
    • Remove from heat and stir in the grated cheese and garlic powder until the cheese is melted. Season with salt and pepper to taste.
  3. Serve:
    • Once the cauliflower is roasted, place it on a serving plate.
    • Drizzle the warm cheese sauce generously over the cauliflower.
    • Garnish with chopped fresh parsley.
