Classic Creamy Chicken Salad
Ingredients:
- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 celery stalk, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup diced apple (optional for sweetness)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (optional)
Instructions:
- Prepare the Chicken:
- If not already cooked, poach or bake the chicken breast until fully cooked, then shred or dice into bite-sized pieces.
- Mix the Dressing:
- In a large bowl, combine the mayonnaise, sour cream or Greek yogurt, Dijon mustard, lemon juice, and apple cider vinegar. Stir until smooth and well blended.
- Add the Vegetables and Apple:
- Add the chopped celery, red onion, and diced apple (if using) to the dressing. Stir to combine.
- Combine with Chicken:
- Add the shredded or diced chicken to the bowl. Mix until the chicken is evenly coated with the dressing.
- Season and Garnish:
- Season the chicken salad with garlic powder, salt, and pepper to taste. Stir in the chopped fresh parsley, if desired.
- Chill and Serve:
- Cover the bowl and refrigerate the chicken salad for at least 1 hour before serving to allow the flavors to meld.
