Crispy Baked Zucchini Fries
Ingredients:
- 2 large zucchinis
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (Panko works great for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper to taste
- Olive oil spray or cooking spray
Instructions:
- Preheat Oven:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the Zucchini:
- Wash and dry the zucchinis.
- Cut the zucchinis into thin slices, about 1/4-inch thick.
- Set Up Breading Station:
- In one shallow dish, place the flour.
- In a second shallow dish, beat the eggs.
- In a third shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Bread the Zucchini Slices:
- Dredge each zucchini slice in flour, shaking off any excess.
- Dip the floured slice into the beaten eggs, coating it completely.
- Finally, coat the slice in the breadcrumb mixture, pressing lightly to adhere the crumbs.
- Bake the Zucchini Fries:
- Arrange the breaded zucchini slices in a single layer on the prepared baking sheet.
- Lightly spray the tops with olive oil or cooking spray.
- Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden brown and crispy, turning them halfway through the baking time.
- Serve:
- Serve the crispy baked zucchini fries hot, with your favorite dipping sauce.
