Almond Cream Cake

 

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Almond Cream:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup all-purpose flour
  • 1 teaspoon almond extract

For the Topping:

  • 1/2 cup sliced almonds
  • Powdered sugar, for dusting

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch (20×20 cm) baking pan or line it with parchment paper.
  2. Prepare the Cake Batter:
    • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
    • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
    • Beat in the eggs, one at a time, followed by the vanilla extract.
    • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  3. Prepare the Almond Cream:
    • In a medium bowl, cream the softened butter and granulated sugar together until light and fluffy.
    • Beat in the eggs, one at a time, followed by the almond extract.
    • Mix in the almond flour and all-purpose flour until well combined.
  4. Assemble the Cake:
    • Pour the cake batter into the prepared baking pan and spread it evenly.
    • Using a piping bag or a spoon, pipe or spread the almond cream on top of the cake batter in an even layer.
    • Sprinkle the sliced almonds over the top.
  5. Bake the Cake:
    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
    • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Serve:
    • Once the cake is completely cooled, dust the top with powdered sugar.
    • Slice and serve. Enjoy!

Tips:

  • Ensure the butter is softened to room temperature for both the cake batter and almond cream for the best texture.
  • You can add a few drops of lemon or orange zest to the cake batter for an extra hint of citrus flavor.
