Grilled Cheese Sandwich with Jalapeños and Bacon
Ingredients:
- 8 slices of bread (sourdough or your preferred type)
- 8 slices of cheddar cheese
- 4 slices of mozzarella cheese
- 4 slices of cooked bacon, crumbled
- 2 fresh jalapeños, thinly sliced
- 4 tablespoons butter, softened
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Ingredients:
- Cook the bacon until crispy, then crumble it into small pieces.
- Thinly slice the fresh jalapeños.
- Assemble the Sandwiches:
- Lay out 4 slices of bread on a flat surface.
- Place 2 slices of cheddar cheese on each slice of bread.
- Sprinkle the crumbled bacon and sliced jalapeños evenly over the cheddar cheese.
- Top with a slice of mozzarella cheese on each sandwich.
- Place another slice of bread on top to form the sandwiches.
- Butter the Bread:
- Spread softened butter on the outside of each sandwich, making sure to cover the entire surface for a crispy, golden crust.
- Grill the Sandwiches:
- Heat a large skillet or griddle over medium heat.
- Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down gently with a spatula for even cooking.
- Serve:
- Remove the sandwiches from the skillet and let them cool slightly.
- Cut the sandwiches in half or into quarters.
- Garnish with chopped fresh parsley if desired and sprinkle with a little salt and pepper.

- For a spicier sandwich, leave the seeds in the jalapeños or add a dash of hot sauce.
