Creamy Garlic Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)
  • Fresh vegetables, diced (for serving, optional)

Instructions:

  1. Season and Sear the Chicken:
    • Season the chicken breasts with salt and black pepper.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side.
    • Remove the chicken from the skillet and set it aside.
  2. Make the Sauce:
    • In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
    • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
    • Reduce the heat to medium-low and stir in the heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using).
    • Simmer the sauce for 5-7 minutes, until it begins to thicken. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce reaches your desired consistency.
  3. Cook the Chicken in the Sauce:
    • Return the chicken breasts to the skillet and simmer for an additional 10 minutes, or until the chicken is cooked through and the sauce is thickened.
  4. Serve:
    • Garnish the creamy garlic chicken with chopped fresh parsley.
    • Serve with fresh diced vegetables on the side, if desired.
