Zucchini Fritters Recipe
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley or chives)
- 1 clove garlic, minced
- 1 egg, lightly beaten
- Salt and pepper to taste
- Olive oil or vegetable oil for frying

- Prepare the Zucchini:
- Grate the zucchinis and place them in a bowl. Sprinkle with 1 teaspoon of salt and let sit for about 10 minutes to draw out moisture.
- After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much excess liquid from the zucchini as possible.
- Make the Batter:
- In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, fresh herbs, minced garlic, and the beaten egg. Season with salt and pepper to taste.
- Mix well until all ingredients are combined into a thick batter.
- Cook the Fritters:
- Heat a few tablespoons of olive oil in a large skillet over medium heat.
- Scoop spoonfuls of the batter into the hot skillet, flattening them gently with a spatula to form patties.
