Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (such as parsley or chives)
  • 1 clove garlic, minced
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • Olive oil or vegetable oil for frying

Instructions

  1. Prepare the Zucchini:
    • Grate the zucchinis and place them in a bowl. Sprinkle with 1 teaspoon of salt and let sit for about 10 minutes to draw out moisture.
    • After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much excess liquid from the zucchini as possible.
  2. Make the Batter:
    • In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, fresh herbs, minced garlic, and the beaten egg. Season with salt and pepper to taste.
    • Mix well until all ingredients are combined into a thick batter.
  3. Cook the Fritters:
    • Heat a few tablespoons of olive oil in a large skillet over medium heat.
    • Scoop spoonfuls of the batter into the hot skillet, flattening them gently with a spatula to form patties.
    • Cook for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.
  4. Serve:
    • Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
    • Serve warm, optionally with a dollop of sour cream or yogurt, and a sprinkle of extra fresh herbs.
