Chocolate Chess Pie Recipe

 

Ingredients

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water

For the Chocolate Filling:

  • 1/2 cup unsalted butter
  • 2 ounces unsweetened chocolate, chopped
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 tablespoons cornmeal
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3 large eggs

Instructions

  1. Make the Pie Crust:
    • In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
    • Stir in the ice water, a tablespoon at a time, until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
    • Roll out the dough on a lightly floured surface and fit it into a 9-inch pie pan. Trim and crimp the edges as desired.
  2. Prepare the Filling:
    • Preheat your oven to 350°F (175°C).
    • In a medium saucepan, melt the butter and chocolate over low heat, stirring constantly until smooth. Remove from heat.
    • In a large bowl, whisk together the granulated sugar, brown sugar, cornmeal, flour, and salt.
    • Add the melted chocolate mixture, milk, and vanilla extract to the dry ingredients and mix well.
    • Whisk in the eggs until the filling is smooth and well combined.
  3. Assemble the Pie:
    • Pour the chocolate filling into the prepared pie crust.
    • Bake for 45 to 50 minutes, or until the filling is set and the top is slightly cracked. The center should still be slightly wobbly but will set as it cools.
  4. Cool and Serve:
    • Allow the pie to cool completely at room temperature before slicing. This will ensure the filling is fully set.
    • Serve the pie at room temperature or slightly chilled, optionally with whipped cream or a scoop of vanilla ice cream.
