Cherry Streusel Muffins Recipe

 

Ingredients

For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cherries, pitted and chopped

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Prepare the Muffins:
    • Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
    • In a large bowl, combine the flour, sugar, baking powder, and salt.
    • In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
    • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
    • Gently fold in the chopped cherries.
  2. Prepare the Streusel Topping:
    • In a small bowl, mix the flour, brown sugar, and cinnamon.
    • Add the melted butter and mix with a fork until the mixture is crumbly.
  3. Assemble and Bake:
    • Divide the muffin batter evenly among the prepared muffin cups.
    • Sprinkle the streusel topping over each muffin.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
