Chicken Salad with Grapes and Celery

 

Ingredients:

  • 3 cups cooked chicken, shredded or diced
  • 1 cup seedless red grapes, halved
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup sliced almonds or chopped walnuts (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream (optional, for extra creaminess)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves or croissants (optional, for serving)

Instructions:

  1. Prepare the Chicken:
    • If you don’t have pre-cooked chicken, you can poach or roast chicken breasts and then shred or dice them once they’ve cooled.
  2. Mix the Dressing:
    • In a small bowl, whisk together the mayonnaise, Greek yogurt (if using), lemon juice, Dijon mustard, salt, and pepper. Adjust the seasoning to taste.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the cooked chicken, halved grapes, diced celery, red onion, and sliced almonds or walnuts (if using).
  4. Add the Dressing:
    • Pour the dressing over the chicken mixture. Toss everything together until well coated.
  5. Chill:
    • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve:
    • Serve the chicken salad on a bed of lettuce, in a sandwich, or with croissants.
