Snowball Cookies Recipe

 

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for coating
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped nuts (such as walnuts, pecans, or almonds)

Equipment:

  • Mixing bowls
  • Baking sheet
  • Parchment paper (optional)
  • Wire rack for cooling

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
    • Line a baking sheet with parchment paper or leave ungreased.
  2. Mix Butter and Sugar:
    • In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until smooth and fluffy. Stir in the vanilla extract.
  3. Combine Dry Ingredients:
    • In another bowl, whisk together the flour and salt. Gradually blend this into the butter mixture. Stir in the chopped nuts until evenly distributed.
  4. Shape Cookies:
    • Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
  5. Bake:
    • Bake in the preheated oven for about 14 to 18 minutes, or until very lightly browned.
  6. Coat in Sugar:
    • Remove from oven and while still warm, roll cookies in additional powdered sugar. Cool on a wire rack and once cooled, roll them in powdered sugar again for a second coat.
