Vibrant Beetroot Tzatziki

 

Ingredients:

  • 3 medium beets, cooked and grated
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions:

  1. Prepare the Beets:
    • Cook the beets by boiling or roasting them until tender. Once cooled, peel and grate them.
  2. Mix Ingredients:
    • In a mixing bowl, combine the grated beets, Greek yogurt, minced garlic, chopped dill, and lemon juice. Mix thoroughly until all ingredients are well combined.
  3. Season:
    • Add salt and pepper to taste. Mix again.
  4. Chill:
    • Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to meld.
  5. Serve:
    • Drizzle with a little olive oil before serving. This beetroot tzatziki can be served as a refreshing side dish or dip with warm pita bread, vegetables, or as a condiment with grilled meats.
