Vibrant Beetroot Tzatziki
Ingredients:
- 3 medium beets, cooked and grated
 - 1 cup Greek yogurt
 - 2 cloves garlic, minced
 - 2 tablespoons fresh dill, chopped
 - 1 tablespoon lemon juice
 - Salt and pepper, to taste
 - Olive oil, for drizzling
 
Instructions:
- Prepare the Beets:
- Cook the beets by boiling or roasting them until tender. Once cooled, peel and grate them.
 
 - Mix Ingredients:
- In a mixing bowl, combine the grated beets, Greek yogurt, minced garlic, chopped dill, and lemon juice. Mix thoroughly until all ingredients are well combined.
 
 - Season:
- Add salt and pepper to taste. Mix again.
 
 - Chill:
- Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to meld.
 
 - Serve:
- Drizzle with a little olive oil before serving. This beetroot tzatziki can be served as a refreshing side dish or dip with warm pita bread, vegetables, or as a condiment with grilled meats.
