Creamy Smothered Chicken Burritos

 

 

 

Ingredients:

For the Burritos:
  • 2 cups cooked chicken breast (shredded or diced)
  • 1 cup cooked rice
  • 1 cup black beans (optional)
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa or enchilada sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large tortillas
For the Creamy Sauce:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Fresh parsley or cilantro (for garnish)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the filling:
    • In a mixing bowl, combine the cooked chicken, rice, black beans (if using), shredded cheddar cheese, salsa or enchilada sauce, garlic powder, chili powder, salt, and pepper.
    • Mix until well combined.
  3. Assemble the burritos:
    • Place a large tortilla on a flat surface.
    • Add about 1/2 cup of the filling to the center of the tortilla.
    • Roll the tortilla tightly, folding in the sides, to form a burrito.
    • Repeat for the remaining tortillas and filling.
  4. Prepare the creamy sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Whisk in the flour and cook for 1 minute, stirring constantly.
    • Gradually add the chicken broth, whisking until smooth and thickened.
    • Stir in the sour cream, shredded cheese, garlic powder, and black pepper.
    • Cook until the cheese is melted and the sauce is creamy.
  5. Bake the burritos:
    • Place the burritos seam-side down in a greased baking dish.
    • Pour the creamy sauce over the burritos, ensuring they are fully covered.
    • Bake in the preheated oven for 15-20 minutes, or until heated through and bubbling.
  6. Garnish and serve:
    • Sprinkle with additional shredded cheese and fresh parsley or cilantro before serving.
