Cheesy Beef and Potato Casserole
Ingredients:
- 1 pound (450g) ground beef
- 1 medium onion (diced)
- 3 medium potatoes (peeled and thinly sliced)
- 2 cups shredded cheddar cheese
- 1 cup mozzarella cheese (optional, for extra cheesiness)
- 1/2 cup beef broth
- 1 can diced tomatoes (optional, drained)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano or Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil or butter (for greasing)
- Fresh parsley (chopped, for garnish)
Instructions:
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with olive oil or butter.
- Cook the beef mixture:
- Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spoon.
- Add the diced onion and cook until softened.
- Season with garlic powder, paprika, oregano, salt, and pepper. Stir in the diced tomatoes (if using) and simmer for 5 minutes.
- Layer the casserole:
- In the prepared baking dish, arrange a single layer of thinly sliced potatoes at the bottom.
- Spread half of the cooked beef mixture over the potatoes.
- Sprinkle 1 cup of cheddar cheese over the beef.
- Repeat the layers (potatoes, beef, cheese) until all ingredients are used, ending with a layer of cheese on top.
- Add broth and bake:
- Pour the beef broth evenly over the casserole to keep it moist.
- Cover the dish with foil and bake for 45 minutes.
- Melt the cheese topping:
- Remove the foil and sprinkle the mozzarella cheese on top (optional).
- Bake uncovered for an additional 15-20 minutes, or until the cheese is golden and bubbly and the potatoes are fork-tender.
- Serve:
- Garnish with fresh parsley and let the casserole rest for 5 minutes before serving.
