Peanut Butter Sandwich Cookies
Ingredients:
For the Cookies:
- 1 cup (250g) creamy peanut butter
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
For the Filling:
- 1/2 cup (125g) creamy peanut butter
- 1/4 cup (50g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 2 tbsp milk or heavy cream
Instructions:
- Prepare the Cookies:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth.
- Scoop 1-tablespoon portions of dough and roll them into balls. Place on the prepared baking sheet, about 2 inches apart.
- Flatten each cookie slightly with a fork, creating a crisscross pattern.
- Bake:
- Bake for 8-10 minutes or until the edges are set. Let the cookies cool completely on the baking sheet.
- Prepare the Filling:
- In a bowl, beat together peanut butter and softened butter until creamy.
- Gradually add powdered sugar and milk, beating until smooth and fluffy.
- Assemble the Sandwiches:
- Spread or pipe a generous amount of filling onto the flat side of one cookie. Top with another cookie to form a sandwich.
- Repeat with the remaining cookies and filling.
- Serve:
- Enjoy immediately, or store in an airtight container at room temperature for up to 3 days.
