Peanut Butter Sandwich Cookies

 

 

 

Ingredients:

For the Cookies:
  • 1 cup (250g) creamy peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
For the Filling:
  • 1/2 cup (125g) creamy peanut butter
  • 1/4 cup (50g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 2 tbsp milk or heavy cream

Instructions:

  1. Prepare the Cookies:
    • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
    • In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth.
    • Scoop 1-tablespoon portions of dough and roll them into balls. Place on the prepared baking sheet, about 2 inches apart.
    • Flatten each cookie slightly with a fork, creating a crisscross pattern.
  2. Bake:
    • Bake for 8-10 minutes or until the edges are set. Let the cookies cool completely on the baking sheet.
  3. Prepare the Filling:
    • In a bowl, beat together peanut butter and softened butter until creamy.
    • Gradually add powdered sugar and milk, beating until smooth and fluffy.
  4. Assemble the Sandwiches:
    • Spread or pipe a generous amount of filling onto the flat side of one cookie. Top with another cookie to form a sandwich.
    • Repeat with the remaining cookies and filling.
  5. Serve:
    • Enjoy immediately, or store in an airtight container at room temperature for up to 3 days.
