Apple Cinnamon Bread Pudding with Caramel Glaze
Ingredients:
For the Bread Pudding:
- 6 cups of day-old bread, cubed (brioche or challah works well)
- 3 large apples, peeled, cored, and diced
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
For the Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon vanilla extract
- A pinch of salt
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- Prepare the Bread Pudding:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the cubed bread and diced apples.
- In a separate bowl, whisk together the granulated sugar, brown sugar, ground cinnamon, and ground nutmeg.
- In another bowl, whisk together the eggs, milk, heavy cream, and vanilla extract. Add the melted butter and mix well.
- Pour the egg mixture over the bread and apples, and gently toss to combine. Make sure all the bread pieces are soaked.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake the Bread Pudding:
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the pudding is set.
- Prepare the Caramel Sauce:
- In a medium saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and let the mixture come to a boil.
- Continue to cook until the mixture turns a deep amber color. Remove from heat and carefully add the heavy cream (the mixture will bubble vigorously).
- Stir in the butter, vanilla extract, and a pinch of salt until smooth. Set aside to cool slightly.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk if needed to reach the desired consistency.
- Assemble and Serve:
- Drizzle the warm bread pudding with the caramel sauce and the glaze.
- Allow the bread pudding to cool slightly before serving.
