Apple Crumble Cream Cake
Ingredients:
For the Crust and Crumble:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter (cold, cubed)
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
For the Apple Filling:
- 4 medium apples (peeled, cored, and diced)
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (optional, for thickening)
For the Cream Layer:
- 1 cup sour cream or Greek yogurt
- 1/2 cup cream cheese (softened)
- 1/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Crust and Crumble:
- Preheat your oven to 350°F (175°C) and grease or line a springform pan.
- In a bowl, mix the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough comes together. Reserve 1/3 of the mixture for the crumble topping.
- Press the remaining dough into the bottom of the springform pan to form the crust.
- Prepare the Apple Filling:
- In a skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until softened.
- If the mixture is too runny, stir in the cornstarch and cook for another 2 minutes until thickened. Let it cool slightly, then spread over the crust.
- Prepare the Cream Layer:
- In a bowl, beat the cream cheese, sour cream, sugar, egg, and vanilla extract until smooth.
- Pour the cream mixture over the apple filling and spread it evenly.
- Add the Crumble Topping:
- Crumble the reserved dough over the cream layer to create the crumble topping.
- Bake:
- Bake in the preheated oven for 45-55 minutes, or until the top is golden and the cream layer is set.
- Let the cake cool in the pan for 15 minutes before removing it. Transfer to a wire rack to cool completely.
- Serve:
- Dust with powdered sugar if desired, and slice. Enjoy with coffee or tea!
