Asian-Style Chicken Meatballs with Rice and Vegetables

 

 

Ingredients:

For the Meatballs:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped cilantro
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, grated
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 egg, beaten
  • Salt and pepper to taste

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • 1 clove garlic, minced

For the Rice and Vegetables:

  • 2 cups jasmine rice, cooked
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • Fresh cilantro for garnish

Instructions:

  1. Prepare the Meatballs:
    • In a large bowl, combine ground chicken, breadcrumbs, cilantro, green onions, garlic, grated carrot, soy sauce, sesame oil, egg, salt, and pepper.
    • Mix well until all ingredients are evenly incorporated.
    • Shape the mixture into small meatballs, about 1 inch in diameter.
  2. Cook the Meatballs:
    • Heat a large skillet over medium-high heat and add a bit of oil.
    • Add the meatballs in batches, making sure not to overcrowd the pan.
    • Cook the meatballs for about 4-5 minutes on each side, or until they are browned and cooked through.
    • Remove the meatballs from the skillet and set aside.
  3. Prepare the Sauce:
    • In a small bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, red pepper flakes, and minced garlic.
    • Pour the sauce into the skillet and bring to a simmer.
    • Return the meatballs to the skillet, tossing them to coat in the sauce.
    • Cook for an additional 2-3 minutes, allowing the meatballs to absorb the flavors.
  4. Assemble the Dish:
    • Divide the cooked jasmine rice among four bowls.
    • Top each bowl with the saucy chicken meatballs.
    • Arrange cucumber slices and julienned carrots on the side.
    • Garnish with fresh cilantro.
  5. Serve:
    • Serve the meatballs and rice immediately, enjoying the fresh and savory flavors of the dish.
