Asian-Style Chicken Meatballs with Rice and Vegetables
Ingredients:
For the Meatballs:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped cilantro
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 small carrot, grated
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 egg, beaten
- Salt and pepper to taste
For the Sauce:
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes (optional)
- 1 clove garlic, minced
For the Rice and Vegetables:

- 2 cups jasmine rice, cooked
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- Fresh cilantro for garnish
Instructions:
- Prepare the Meatballs:
- In a large bowl, combine ground chicken, breadcrumbs, cilantro, green onions, garlic, grated carrot, soy sauce, sesame oil, egg, salt, and pepper.
- Mix well until all ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Cook the Meatballs:
- Heat a large skillet over medium-high heat and add a bit of oil.
- Add the meatballs in batches, making sure not to overcrowd the pan.
- Cook the meatballs for about 4-5 minutes on each side, or until they are browned and cooked through.
- Remove the meatballs from the skillet and set aside.
- Prepare the Sauce:
- In a small bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, red pepper flakes, and minced garlic.
- Pour the sauce into the skillet and bring to a simmer.
- Return the meatballs to the skillet, tossing them to coat in the sauce.
- Cook for an additional 2-3 minutes, allowing the meatballs to absorb the flavors.
- Assemble the Dish:
- Divide the cooked jasmine rice among four bowls.
- Top each bowl with the saucy chicken meatballs.
- Arrange cucumber slices and julienned carrots on the side.
- Garnish with fresh cilantro.
- Serve:
- Serve the meatballs and rice immediately, enjoying the fresh and savory flavors of the dish.
