Bacon, pineapple, chicken skewers
INGREDIENTS
SAUCE:
1/2 cup barbecue sauce
1/2 cup soy sauce
1/4 cup pineapple juice
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
1 1/2 tablespoons minced garlic
1 tablespoon Olive oil
1 teaspoon sesame oil
Skewers:
1 pound (500 g) chicken breast, cut into 1-inch cubes
16 slices bacon, trimmed of excess fat and halved lengthwise (2 1/2 inches x 1 inch).
3 cups fresh pineapple, diced
1 large red pepper, cut into 1″ pieces
1 large green pepper, cut into 1″ pieces
1 large red onion, cut into 1″ pieces
Salt and ground pepper to taste
INSTRUCTIONS
Mix the barbecue sauce together with soy sauce, pineapple juice, rice vinegar, garlic and sesame oil in a large jug or bowl.
Preheat a grill pan (or barbecue griddles) over medium-high heat.
Thread the red onion, piece of red bell pepper (pepper), pineapple, green pepper, bacon and chicken onto skewers and wrap the bacon around the chicken as shown in the picture above. Repeat until all the chicken is used up.Brush skewers evenly with HALF of the marinade (reserve the other HALF for basting). Brush
grill(s) with olive oil. Grill skewers for 5 minutes; Brush with 1/4 cup reserved marinade. Turn skewers over and brush with remaining 1/4 cup marinade. Grill for another 4 minutes, or until the chicken is cooked through and to your liking.Serve immediately
