Baked Chicken with Bell Peppers and Cheese

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or a similar casserole dish with olive oil.
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with paper towels. Season both sides with garlic powder, onion powder, paprika, oregano, basil, salt, and pepper.
  3. Sear the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 2-3 minutes per side until golden brown. Transfer the chicken to the prepared baking dish.
  4. Add the Peppers and Cheese:
    • Arrange the sliced red and yellow bell peppers over and around the chicken breasts. Sprinkle the mozzarella cheese, cheddar cheese, and Parmesan cheese evenly over the top.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. You can use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish and Serve:
    • Once baked, remove the dish from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
  7. Serve:
    • Serve the baked chicken with bell peppers and cheese alongside a fresh salad, steamed vegetables, or over a bed of rice or pasta.
