Baked Chicken with Bell Peppers and Cheese
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or a similar casserole dish with olive oil.
- Prepare the Chicken:
- Pat the chicken breasts dry with paper towels. Season both sides with garlic powder, onion powder, paprika, oregano, basil, salt, and pepper.
- Sear the Chicken:
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 2-3 minutes per side until golden brown. Transfer the chicken to the prepared baking dish.
- Add the Peppers and Cheese:
- Arrange the sliced red and yellow bell peppers over and around the chicken breasts. Sprinkle the mozzarella cheese, cheddar cheese, and Parmesan cheese evenly over the top.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. You can use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
- Garnish and Serve:
- Once baked, remove the dish from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
